In February 2011, 23 fifth year business students visited Carambola Kidz in Limerick, a business started by Mr Colm O'Brien and his wife Aideen in 2003.
The idea came to Colm by chance following a meeting with a man on a train between Dublin and Limerick. As the story goes 'the man on the train' needed someone for a 'healthy school lunch' pilot project in Limerick city and was so impressed with Colm upon meeting him, offered him the opportunity.
The business began supplying 27 lunches to the Corpus Christi National School in Moyross, on the nothside of Limerick city. Today Carambola Kidz supplies 90,000 school lunches nationwide every week.
